What is the difference between the 3 recording modes except the file size?
The recording details for all appear to be the same
Audio: MPEG Audio 48000Hz stereo 256Kbps
Video: MPEG2 Video 704x480 (4:3) 29.97fps 9558Kbps

The video bit rate should be different in the different quality recording modes. I don't know where you got that information.

I used Media Player Classic to display details of my recordings.
Is there a way to view the info on the S200?

I haven't installed any of the bundled software yet.

Maybe it's my untrained eye but I can't notice any difference in the video quality between XP, SP and LP

I don't know if the Media Player Classic would be accurate at reporting the bit rates the S200 MPEG-2 files. The files are most likely be encoded in what is called VBR (Variable Bit Rate) rather Constant Bit Rate (CBR).

I doubt it would be displayed on the S200, maybe the manual might list the rates.

You should notice the difference while panning the camcorder or shooting moving objects also on shooting diagonal objects like a sloping roof. Why don't you do some tests of the same scenes in XP and LP.

The different recording modes XP,SP and LP use different bitrates.
The cam uses VBR and 9558kbps is the max. bitrate in each mode.
However, the mean bitrate is ~3000kbps for LP,6000 for SP and 9000 for XP.
Audio is 256kbps CBR in all modes.
