Without good contrast there will be no good sharpness, period. This is one of the reasons why Canon's Cinemode has less sharpness than other modes.

The HV30 has 1/2.7-inch chip, the SR11/12 has 1/3-inch chip, the SR10 has 1/5-inch chip. Smaller chip generally means worse low-light performance with all other things being equal.
