Yes, there are a lot of big cameras with external controls, manual focus rings, etc. Like the Canon XH-A1. But they are likely all out of your budget. If you are set on getting a giant camera you can get an older MiniDV cam on eBay but the image quality there is nothing compared to modern HD cams.
They have levelled off the last two years, by the way. Manufacturers realized that if you make it smaller than a human hand it becomes exceedingly hard to use  Now the trend is for flat/vertical cameras that are really cheap.
Now, if you do get a small camera, you can always make it easier to hold by putting it on a monopod, tripod, or steadicam device. And O.I.S. cancells out most of your hand shaking.
