I think buying a MiniDV tape all the time is a good sacrifice to get your memories safe. There's no better storage for video than tape yet. Also, there's not a friendlier format than DV/HDV, perhaps, you could buy SD (Not HD) flash memory camcorder wich uses the MPEG2 format wich is lighter than DV (MiniDV), however, in the future, you'll have the problem of not knowing where to put so much video. So I guess you should stick with the tapes. Try, and you'll get used to it.
If you want to go HD, go for the Canon HV20/HV30, you can still find the HV20 at a good price, you just have to search.

The GS320 is a very good SD camera. But it isn't the quality of an HD camera. If you want top quality you will need to upgrade.
Mini-DV tapes are a reliable storage medium. You could move your video to DVD either by using a computer or by using a stand alone DVD recorder. The stand alone recorder will give you less quality though.
Learning to load your video on DVD's using a computer isn't real hard. You can find simple programs to do the job for you. Ulead makes one of the most simple programs to do this. You can also choose very powerful editing programs like Sony Vegas and then burn to DVD using Sony DVD Architect.
If you want to upgrade to a HD camera there are popular choices. Canon makes probably the most popular cameras on this board. If you choose to upgrade just ask on this board which model to get.
